Will the humble protein ball ever go out of style? Not in my book. Here is my go-to recipe, which I love just as it is, or often use as a base for adding other flavours (see below), or as a literal base for slices and bars - the options are endless.
A sweet snack packed full of healthy fats, Vitamin E and fibre.
These Protein Balls are gluten and dairy free.
Made naturally sweet from Medjool dates, renowned for containing potassium, manganese, copper, B vitamins, vitamin A, magnesium and calcium - powerhouses of nutrients! Making these sweet dates beneficial for hair health and digestion.
Buckwheat is also a fantastic flour as it is actually gluten-free as it comes from a fruit seed, unlike other grains. Buckwheat is a complete protein so ideal for vegans/vegetarians; whilst also containing high levels of B vitamins and flavonoids responsible for its antioxidant benefits.
Salted Caramel Protein Balls:
Ingredients
1 cup cashews
5 fresh Medjool dates
1/3 cup Buckwheat flour
1 ½ tsp. Maca powder
2 Tbsp. Coconut oil, melted
2Tbsp. Rice malt syrup
pinch Salt
Directions
Open the dates and remove the pits, tearing into pieces.
Place all dry ingredients and dates into a food processor and blitz until smooth, or slightly less to maintain some chunks.
Add the coconut oil and rice malt, pulsing until well combined and mixture forms a dough.
Roll Tablespoon-sized amounts of mixture into round balls. Place into a container and refrigerate until set (around 30 minutes).
Store in an airtight contained in the fridge, or freezer for up to 4 weeks.

Variations:
Salted Caramel - these are tasty enough just the way they are!
Dark Choc + Sea Salt - simply add 1-2 Tablespoons of good quality cacao powder to the mix, but reduce the Buckwheat to 1/4 cup.
Choc Mint - add cacao as above, as well as 1-2 drops of peppermint oil.
Cookie Dough - add 2-3 Tablespoons of cacao nibs to the mixture and dip in melted dark chocolate.
Coat in any of the following:
- coconut
- cacao powder
- crushed nuts such as pistachios or almonds
- cacao nibs
- matcha powder
- freeze-dried raspberry bits
- chopped goji berries or dried sour cherries
Use as a base - for a raw/gluten free caramel slice (recipe coming soon!)
Press into a baking tin, set, then chop into cubes or bars
Cashews can be substituted for a mixture of nuts; almonds, sunflower seeds, walnuts etc.
