Ingredients:
1 clove garlic
1 Tbsp butter or substitute
1 large handful of mushrooms
2-3 eggs
Roughly 1/3 cup milk
1 Tbsp Kimchi
Herbs of choice (basil, chives, parsley etc. are all great)
1/2 cup spinach leaves, washed
Optional, spring onions or extra herbs
Method:
Roughly chop mushrooms and crush the garlic clove.
preheat a non-stick frying pan on medium. Add butter to melt.
Cook garlic for 1-2 minutes, before adding mushrooms and cooking til softened. Place mushrooms in a bowl and set aside.
In another bowl, whisk together the eggs, milk and salt and pepper.
In the same pan, pour egg mixture into the pan and rotate to cover the entire base.
Cook for a few minutes until bottom is cooked.
Roughly chop kimchi and herbs.
Add spinach, mushrooms, kimchi and herbs to one side of the pan, allowing to cook for another minute.
Flip the bare side over the create the omelette. Serve straight away or top with spring onions or extra herbs.
