RECIPE: Celery pesto

This is THE recipe you need to make when you've just bought a whole bunch of celery, but don't have the heart to throw out all of those fresh, leafy green tops.

Introducing, Celery Pesto! A twist on the old classic, that is just as tasty and just as healthy.



Ingredients:


Leaves from 1 bunch of celery

1/3 cup raw blanched almonds

2 cloves garlic, crushed

1/3 cup grated parmesan cheese

1/2 cup extra virgin olive oil

Salt, to taste


Method:


1. Add celery leaves, almonds, garlic, parmesan and salt in a food processor - blitz until fine.


2. Gradually pour in olive oil, until all ingredients combine together.


3. Store in the fridge for up to 1 week.


4. Enjoy!
